Orange Cranberry Nut Bread
Ingredients
- 2 cups all-purpose flour, divided
- 1 cup granulated sugar
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 cups cranberries, frozen or fresh
- 1/4 cup shortening
- 3/4 cup orange juice
- 1 tbsp orange zest
- 1 lrg egg, beaten
- 1/2 cup nuts, chopped
Instructions
- Sift together dry ingredients into large bowl. Cut in shortening with pastry blender until mixture is crumbly.
- Combine orange juice, orange zest and egg. Pour all at once into dry ingredients, mixing until just moistened. Don't over mix.
- Carefully fold in cranberries and nuts.
- Spoon into greased loaf pan. Bake at 350° for 1 hour until crust is golden brown and toothpick inserted comes out clean. Remove from pan. Cool.
