Orange Cranberry Nut Bread
This bread is one of my favorites! The sweet orange and the tart cranberry are a great duo in this delicious bread!
- 2 cups all-purpose flour, divided
- 1 cup granulated sugar
- 1-1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 cups cranberries, frozen or fresh
- 1/4 cup shortening
- 3/4 cup orange juice
- 1 tbsp orange zest
- 1 lrg egg, beaten
- 1/2 cup nuts, chopped
Sift together dry ingredients into large bowl. Cut in shortening with pastry blender until mixture is crumbly.
Combine orange juice, orange zest and egg. Pour all at once into dry ingredients, mixing until just moistened. Don't over mix.
Carefully fold in cranberries and nuts.
Spoon into greased loaf pan. Bake at 350° for 1 hour until crust is golden brown and toothpick inserted comes out clean. Remove from pan. Cool.
