Chicken Veggie Taco
This recipe makes a delicious and healthy lunch or dinner for one. Just pair it with your favorite side dish… chips, fruit, veggie sticks, or a side salad. Increase the ingredients to serve a family.
Ingredients
- 1/2 cup diced cooked chicken (Can use Rotisserie)
- 1 slice pepper jack cheese (or any other you prefer)
- 1 flour tortilla (I used Carb Balance)
- 1/4 each red, yellow and orange peppers, thinly sliced
- 1 handful spinach, kale or romaine
- 3-4 pickle chips
- 3-4 carrot chips
- 1 tsp yellow mustard
- 1 tsp garlic ranch dressing
- salt and pepper to taste
Instructions
- Lay tortilla flat and spread mustard on one half and ranch on the other half.
- Top with chicken and all veggies.
- Sprinkle salt and pepper over top.
- Carefully roll up and enjoy!
