Chicken Veggie Taco
This recipe makes a delicious and healthy lunch or dinner for one. Just pair it with your favorite side dish... chips, fruit, veggie sticks, or a side salad. Increase the ingredients to serve a family.

- 1/2 cup diced cooked chicken (Can use Rotisserie)
- 1 slice pepper jack cheese (or any other you prefer)
- 1 flour tortilla (I used Carb Balance)
- 1/4 each red, yellow and orange peppers, thinly sliced
- 1 handful spinach, kale or romaine
- 3-4 pickle chips
- 3-4 carrot chips
- 1 tsp yellow mustard
- 1 tsp garlic ranch dressing
- salt and pepper to taste
Lay tortilla flat and spread mustard on one half and ranch on the other half.
Top with chicken and all veggies.
Sprinkle salt and pepper over top.
Carefully roll up and enjoy!
