Chicken Veggie Taco

This recipe makes a delicious and healthy lunch or dinner for one. Just pair it with your favorite side dish... chips, fruit, veggie sticks, or a side salad. Increase the ingredients to serve a family.

Ingredients
  

  • 1/2 cup diced cooked chicken (Can use Rotisserie)
  • 1 slice pepper jack cheese (or any other you prefer)
  • 1 flour tortilla (I used Carb Balance)
  • 1/4 each red, yellow and orange peppers, thinly sliced
  • 1 handful spinach, kale or romaine
  • 3-4 pickle chips
  • 3-4 carrot chips
  • 1 tsp yellow mustard
  • 1 tsp garlic ranch dressing
  • salt and pepper to taste

Instructions
 

  • Lay tortilla flat and spread mustard on one half and ranch on the other half.
  • Top with chicken and all veggies.
  • Sprinkle salt and pepper over top.
  • Carefully roll up and enjoy!
