Orange Cranberry Nut Bread

This bread is one of my favorites! The sweet orange and the tart cranberry are a great duo in this delicious bread!
Course Breakfast, Brunch
Servings 1 loaf

Ingredients
  

  • 2 cups all-purpose flour, divided
  • 1 cup granulated sugar
  • 1-1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups cranberries, frozen or fresh
  • 1/4 cup shortening
  • 3/4 cup orange juice
  • 1 tbsp orange zest
  • 1 lrg egg, beaten
  • 1/2 cup nuts, chopped

Instructions
 

  • Sift together dry ingredients into large bowl. Cut in shortening with pastry blender until mixture is crumbly.
  • Combine orange juice, orange zest and egg. Pour all at once into dry ingredients, mixing until just moistened. Don't over mix.
  • Carefully fold in cranberries and nuts.
  • Spoon into greased loaf pan. Bake at 350° for 1 hour until crust is golden brown and toothpick inserted comes out clean. Remove from pan. Cool.
