Greek Chickpea Salad
Ingredients
- 2 cans chickpeas, drained
- 2 cucumbers, diced
- 1/2 red onion, chopped
- 2 handfuls olives, chopped (can be green or black)
- 2 handfuls cherry tomatoes, chopped
- lemon juice
- olive oil
- feta cheese
- 1 cup salad greens (your choice)
- salt and pepper to taste
Instructions
- Prepare all veggies and toss together in large bowl.
- Mix together olive oil and lemon juice to make the dressing.
- Top salad with feta cheese and salt and pepper.
