Greek Chickpea Salad

This Greek salad is light, healthy and delicious. It would also be good with a "tzatziki sauce" dressing.

Ingredients
  

  • 2 cans chickpeas, drained
  • 2 cucumbers, diced
  • 1/2 red onion, chopped
  • 2 handfuls olives, chopped (can be green or black)
  • 2 handfuls cherry tomatoes, chopped
  • lemon juice
  • olive oil
  • feta cheese
  • 1 cup salad greens (your choice)
  • salt and pepper to taste

Instructions
 

  • Prepare all veggies and toss together in large bowl.
  • Mix together olive oil and lemon juice to make the dressing.
  • Top salad with feta cheese and salt and pepper.
  • Prep Tip: Add the dressing to the salad just before eating to keep veggies crisp.
