Greek Chickpea Salad
This Greek salad is light, healthy and delicious. It would also be good with a "tzatziki sauce" dressing.

Ingredients

cans
chickpeas, drained

cucumbers, diced
1/2
red onion, chopped
2
handfuls
olives, chopped (can be green or black)

handfuls
cherry tomatoes, chopped
lemon juice
olive oil
feta cheese

cup
salad greens (your choice)
salt and pepper to taste
Instructions
Prepare all veggies and toss together in large bowl.
Mix together olive oil and lemon juice to make the dressing.
Top salad with feta cheese and salt and pepper.
Prep Tip: Add the dressing to the salad just before eating to keep veggies crisp.
