Breakfast Casserole

This recipe is perfect for Sunday Brunch, overnight guests, or anytime really. The casserole can also be made ahead of time and frozen. You can also cut into squares before freezing and freeze each one individually for a quick, delicious breakfast.

Servings 6 servings

Ingredients
  

  • 1 lb ground breakfast sausage
  • 1 tbsp garlic, minced
  • 2 cups bell peppers (any color, red, green, yellow, orange), diced
  • 1/2 cup yellow onion, diced
  • 3 cups spinach, chopped
  • 2 green onions, chopped
  • 12 eggs
  • 1/8 tsp salt and pepper
  • 1/2 cup cheddar cheese, shredded

Instructions
 

  • Cook sausage in skillet until fully cooked. Add garlic, peppers and onions to skillet and sauté with sausage for about 2 minutes until tender.
  • Place in baking dish. Add chopped spinach on top.
  • In a separate bowl, whisk eggs with salt and pepper. Pour eggs over vegetables in baking dish and gently mix to make sure eggs are covering the entire dish.
  • Top with cheese and bake at 350 degrees for 45 minutes or until a fork comes out clean and eggs are cooked through.
  • Wrap tightly, label and freeze when cooled.
  • To Prepare: Cut into squares and microwave only what is needed. Can be separated into individual servings before freezing.
