Breakfast Casserole
Ingredients
- 1 lb ground breakfast sausage
- 1 tbsp garlic, minced
- 2 cups bell peppers (any color, red, green, yellow, orange), diced
- 1/2 cup yellow onion, diced
- 3 cups spinach, chopped
- 2 green onions, chopped
- 12 eggs
- 1/8 tsp salt and pepper
- 1/2 cup cheddar cheese, shredded
Instructions
- Cook sausage in skillet until fully cooked. Add garlic, peppers and onions to skillet and sauté with sausage for about 2 minutes until tender.
- Place in baking dish. Add chopped spinach on top.
- In a separate bowl, whisk eggs with salt and pepper. Pour eggs over vegetables in baking dish and gently mix to make sure eggs are covering the entire dish.
- Top with cheese and bake at 350 degrees for 45 minutes or until a fork comes out clean and eggs are cooked through.
- Wrap tightly, label and freeze when cooled.
- To Prepare: Cut into squares and microwave only what is needed. Can be separated into individual servings before freezing.
