Barbecue Grilled Veggie Skewers

These nutritious grilled veggies make the perfect side dish to any meal.

Ingredients
  

  • bell peppers, any color, cut in large pieces
  • zucchini, cut in large pieces
  • red onion, cut in large pieces
  • mushrooms, cut in large pieces
  • olive oil
  • salt, pepper, garlic powder to taste
  • Balsamic glaze or barbecue sauce drizzle

Instructions
 

  • Toss all chopped veggies with oil and seasonings.
  • Thread onto skewers and grill 3 to 5 minutes per side.
  • Prep Tip: Assemble skewers ahead of time and store in containers in the refrigerator until ready to grill.
