Place chicken thighs in greased baking dish. Add the Italian seasoning, salt and pepper to the pasta sauce and mix to combine. Pour over the chicken thighs until all are coated.
Sprinkle mozzarella cheese on top of chicken, then top with the parmesan cheese.
In a small bowl, add the first 3 "Topping" ingredients and stir gently with a fork.
Add the olive oil and toss until breadcrumbs are evenly coated but not sticky or clumping.
Gently spread the breadcrumb topping over the parmesan cheese layer.
Wrap tightly, label and freeze.
To prepare: Remove from freezer and thaw in refrigerator overnight.
Can add more cheese to top.
Bake at 350 degrees for 25 to 30 minutes, until bubbly and breadcrumbs are toasted and golden brown.
Serve by itself or on top of pasta or rice.
