Banana Nut Bread
This sweet, nutty bread is a classic and is perfect for breakfast, brunch, dessert or a snack.
- 2 sticks butter, softened
- 3 cups granulated sugar
- 4 lrg eggs, beaten
- 4 cups all-purpose flour
- 2 tsp baking soda
- 2 tsp vanilla extract
- 1/2 cup buttermilk
- 2 cups bananas, mashed
- 1 cup nuts, chopped (pecans, walnuts work well)
Cream butter and sugar together until smooth. Add eggs, one at a time and mix well.
Sift dry ingredients together and add alternately with buttermilk. Mix well.
Add bananas and nuts.
Pour into (3) greased loaf pans and bake at 325° for 45 to 55 minutes.
