Taco Soup is everything you love about tacos — bold spices, hearty meat, beans, and veggies — all simmered together in one warm, satisfying bowl. It’s quick, filling, and perfect for busy nights when you want something cozy without a lot of fuss. With just a few pantry staples, you can have dinner on the table in no time. It is one of my favorites in the Fall and Winter.

This soup is endlessly customizable and perfect for topping with cheese, sour cream, tortilla chips, cilantro, or avocado. Another great variation is to substitute cooked, shredded chicken for the ground beef! It freezes beautifully, reheats well, and makes enough to feed the whole family. If you love easy, flavorful meals, this one is sure to become a family favorite.

Taco Soup

This hearty soup is a complete meal. It's warm, delicious and easy to make.

Ingredients
  

  • 2 cans Rotel tomatoes, mild
  • 2-1/2 lbs ground beef, seasoned, cooked and drained
  • 2 onions, chopped and cooked with beef
  • 2 cans red kidney beans
  • 2 cans pinto beans w/jalapenos
  • 2 cans whole kernel corn, drained
  • 1 pkg taco seasoning mix
  • 1 pkg Ranch Dressing mix
  • grated cheddar cheese
  • sour cream
  • Fritos corn chips

Instructions
 

  • Put all ingredients (except for last 3) in large pot on top of stove and heat together for 45 minutes. Top with grated cheese, sour cream and Fritos.
  • Diced or shredded chicken can be substituted for ground beef.
