Breakfast Burritos

These breakfast burritos can be made ahead of time to your liking. Feel free to mix ingredients and add your favorites. They are hearty, delicious, nutritious and can be put into the microwave on busy mornings for a quick breakfast on the go.

Ingredients
  

  • 1 lb ground breakfast sausage
  • 1 tbsp garlic, minced
  • 2 cups frozen Tater Tots
  • 2 tbsp olive oil
  • 1/3 cup half and half
  • 1 16 oz can refried beans
  • 8 8-inch flour tortillas
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterrey Jack cheese, shredded
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped

Instructions
 

  • Bake Tater Tots at 400 degrees according to package directions; set aside.
  • Heat olive oil in large skillet over medium heat. Cook sausage until browned; drain excess fat, reserving 1 tbsp in skillet.
  • Add eggs to skillet and cook, whisking until they just begin to set.
  • Gently whisk in half and half; season with salt and pepper, to taste.
  • Continue cooking until thickened; set aside.
  • Spread beans down centers of tortillas; top with tater tots, sausage, eggs, cheeses, tomatoes and cilantro. Fold in opposite sides of each tortilla, then roll up, burrito style.
  • Place burritos, seam side down, in zip top freezer bag, label and freeze.
  • To Prepare: Remove from freezer and bake in baking dish at 400 degrees for 30 to 40 minutes, OR microwave for 4 to 6 minutes.
