This cowboy inspired meal is hearty, delicious and can be prepped ahead of time and on the table in no time.

Ingredients
  

  • 1-1/2 lbs ground beef
  • 1 28 oz can baked beans
  • 1 11 oz can whole kernel corn, drained
  • 1/4 cup barbeque sauce
  • 2 tbsp ketchup
  • 1 tbsp prepared yellow mustard
  • 3/4 cup cheddar cheese, shredded
  • 1 can diced tomatoes, undrained
  • green onions, sliced and sour cream (optional)
  • tortilla chips, parsley (optional)

Instructions
 

  • In large skillet, cook beef over medium heat until no longer pink; drain well.
  • Stir in the baked beans, corn, barbecue sauce, ketchup and mustard. Mix well.
  • Cool completely and place in zip top freezer bag, label and freeze.
  • To Prepare: Thaw in refrigerator. Heat in saucepan over low heat until hot.
  • Sprinkle with cheese; cook until melted. Top with green onions and sour cream, if desired. Serve over tortilla chips or corn chips.
