Lentil & Vegetable Soup

This hearty comforting soup is perfect for those chilly nights.

Equipment

  • 1 Slow Cooker

Ingredients
  

  • 3-4 carrots, diced
  • 1/2 onion, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes (any flavor)
  • 1 cup green or brown lentils
  • 4 cups vegetable broth
  • 2 tsp garlic, minced
  • 2 sprigs thyme
  • 1/2 tsp cumin
  • 2 bay leaves
  • 2 tsp parsley, chopped (optional)

Instructions
 

  • Mix all ingredients together and place in a freezer safe container or bag.
  • To Prepare: Pour everything from frozen in a slow cooker or large pot on stovetop. Cook on low for 1 hour or until lentils are tender. Season with salt and pepper to taste.
