
Lentil & Vegetable Soup
This hearty comforting soup is perfect for those chilly nights.
Equipment
- 1 Slow Cooker
Ingredients
- 3-4 carrots, diced
- 1/2 onion, diced
- 2 stalks celery, diced
- 1 can diced tomatoes (any flavor)
- 1 cup green or brown lentils
- 4 cups vegetable broth
- 2 tsp garlic, minced
- 2 sprigs thyme
- 1/2 tsp cumin
- 2 bay leaves
- 2 tsp parsley, chopped (optional)
Instructions
- Mix all ingredients together and place in a freezer safe container or bag.
- To Prepare: Pour everything from frozen in a slow cooker or large pot on stovetop. Cook on low for 1 hour or until lentils are tender. Season with salt and pepper to taste.
